Fermenting and Transforming the Present
Written with laagencia following a month-long open kitchen and fermentation school hosted at Rib in Rotterdam in August 2020, this text reflects on fermentation as a way to unearth metaphors and perform culture. Exploring the deep connections between bacteria, food, biopolitics, and digital telepathy, it proposes a return to collective, hands-on rituals of fermentation as a way to resist the sterility of industrial modernity.
